Stuffed Lebanese Zucchini

Ingredients:

  • 10 Lebanese zucchini ( mid-sized)
  • 150g raw minced beef
  • 50g long-grain rice, washed and drained
  • 1 small red chilli, finely chopped
  • 1 tbsp chopped parsley
  • 200g tomato paste or puree
  • salt and pepper
  • water

Method:

  • wash zucchini, remove stalk and dried section at the end
  • carefully hollow out the pulp, using a marrow scooper
  • combine the mince, rice, chilli, and parsley in a large bowl
  • season with salt and pepper
  • fill each zucchini shell about three-quarters full with rice mixture
  • place zucchini in a large saucepan, cover with cold water, add tomato puree
  • bring to the boil over high heat
  • reduce heat to low and cook for 30min
