Ingredients:
- 10 Lebanese zucchini ( mid-sized)
- 150g raw minced beef
- 50g long-grain rice, washed and drained
- 1 small red chilli, finely chopped
- 1 tbsp chopped parsley
- 200g tomato paste or puree
- salt and pepper
- water
Method: |
- wash zucchini, remove stalk and dried section at the end
- carefully hollow out the pulp, using a marrow scooper
- combine the mince, rice, chilli, and parsley in a large bowl
- season with salt and pepper
- fill each zucchini shell about three-quarters full with rice mixture
- place zucchini in a large saucepan, cover with cold water, add tomato puree
- bring to the boil over high heat
- reduce heat to low and cook for 30min
