Ingredients for Pumpkin Soup:
- 400g pumpkin
- 50g onion
- 50g carrot
- 50g celery
- 1 garlic clove
- 1 bay leaf
- salt & ground pepper
- 1.5 litre water

Method:
- Place all vegetables in cold water.
- Slowly bring to the boil, reduce the heat, cover and simmer for 30 minutes.
- Transfer soup to food processor and process until smooth.
- Strain and return soup to the pan - reheat.
- Season with salt and freshly ground pepper.
- Ladle into bowls and garnish with soured cream, sprig of dill, and red chilli.
