Pumpkin Soup

Ingredients for Pumpkin Soup:

  • 400g pumpkin
  • 50g onion
  • 50g carrot
  • 50g celery
  • 1 garlic clove
  • 1 bay leaf
  • salt & ground pepper
  • 1.5 litre water

Method:

  • Place all vegetables in cold water.
  • Slowly bring to the boil, reduce the heat, cover and simmer for 30 minutes.
  • Transfer soup to food processor and process until smooth.
  • Strain and return soup to the pan - reheat.
  • Season with salt and freshly ground pepper.
  • Ladle into bowls and garnish with soured cream, sprig of dill, and red chilli.
