1. Wash, peel and cut potatoes into evenly sized pieces.
2. Peel and finely dice onion.
3. Slice sausages.
4. Heats oil in large saucepan, add onion and saute until soft.
5. Add potato, sausages, paprika, oregano and pepper and stir until coat.
6. Add hot water just enough to cover potatoes, and bring to the boil.
7. Add bay leaf, vegeta, and parsley.
8. Reduce heat and simmer gently, stirring occasionally, until most liquid has evaporated. Allow potatoes to fall apart, it will give soup thickened consistency.
9. During cooking add extra hot water if necessary.
