Pork Kebabs

Ingredients for Pork Kebabs:

  • 250g pork fillets
  • 100g red capsicum
  • 100g eggplant
  • 100g onion
  • 100g smoked bacon

Marinade:

  • 60ml vegetable oil
  • 2 teaspoons salt
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon hot chilli sauce

Method:

  • Combine all ingredients for marinade.
  • Cut meat, capsicum, onion, eggplant and bacon into triangular bite sized pieces.
  • Place all ingredients in suitable dish and combine well with marinade. Refrigerate for 1 hour.
  • Thread alternately meat, capsicum, onion, eggplant and bacon onto wooden skewers. ( Make 6 )
  • Cook the kebabs on a hot lightly oiled barbecue grill for 12 minutes turning occasionally.
