As an added factor it can extend the storage life of certain meats and fish. There are two main types of marinade; QUICK- SHORT Marinade and RAW or COOKED MARINADES

 

Marinade for Mongolian Beef:

  • Rice wine 3mls
  • Bicarb soda 1gm
  • Cornflour 2gm
  • Ginger water 10mls
  • Water 30mls
  • Salt 1gm
  • Egg white 1

Marinade for Roast Lamb:

  • 3 garlic cloves
  • 2 tablespoons rosemary
  • 2 tablespoons salt
  • 30ml oil
  • 1 teaspoon paprika
  • 1 teaspoon ground pepper

 

Marinade for Lamb Cutlets:

  • 1 teaspoon dried oregano
  • 3 cloves garlic
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 20ml olive oil
  • 1 teaspoon lemon juice
   

Marinade for Chicken Kebabs:

  • 100 ml olive oil
  • 10ml lemon juice
  • 5 ml rice vine
  • 5 ml hot chilli paste
  • 1 tablespoon salt
  • 1 tablespoon dried oregano
  • 10ml Hoisin sauce

Brown Marinade:

  • 1 teaspoon soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon hot chilli sauce
  • 1 teaspoon english hot mustard
  • 1 teaspoon salt
  • 2 teaspoons oil
  • 50ml water
  • 3 teaspoons curry (madras) powder
